- 3 Starch 5 g
- 4 Lemon≈ $4.70 per kg 5 g
Grey items are salt, spices and anything under 30 g per jar: you usually have them at home, so they are not in the jar price. Sugar, vinegar and oil from 30 g are counted.
Method
Mix 5 g starch with 20 ml cold water until smooth.
Put 200 g frozen berries in a small saucepan, add 40 g sugar2 and 5 g lemon4 juice. Heat over medium heat for 3 minutes, until the berries release their juice.
Pour in the starch mixture in a thin stream, stirring constantly.
Cook for another 2 minutes until thickened; the sauce should turn glossy.
Remove from the heat and lightly mash the berries with a fork if you want a smoother texture. Cool until warm.
Transfer to a clean 0.25 l jar and close with a lid. Store in the refrigerator for up to 10 days.
