A sealed jar keeps up to 10 months in a cool dark place; once opened, up to 3 days in the fridge.
Ingredients
- 1 Apples≈ $3.50 per kg 400 g
- 2 Lemon≈ $4.70 per kg 5 g
Grey items are salt, spices and anything under 30 g per jar: you usually have them at home, so they are not in the jar price. Sugar, vinegar and oil from 30 g are counted.
Method
Sterilize the 250 ml jar and lid: steam the jar or heat it in the oven at 120 °C for 10 minutes, and boil the lid for 5 minutes.
Wash sweet apples1, peel them, core them, and cut them into wedges. You should have about 350 g of flesh.
Put the apples1 in a saucepan, add 50 ml water, and simmer covered over low heat for 15–20 minutes until soft.
Blend the apples1 into a smooth puree and add 5 g lemon2 juice.
Bring the puree to a boil and cook for 5 minutes, stirring constantly so it does not scorch.
Pour the hot puree into the jar up to the rim, seal it immediately, and turn it upside down. Wrap it and let it cool for 24 hours.
Store in a cool, dark place for up to 10 months. Keep an opened jar in the refrigerator and use within 3 days.
