Ingredients
- 1 Sea buckthorn (frozen)pack 300 g ≈ $8.00 300 g
- 2 Sugarpack 1 kg ≈ $1.60 400 g
Grey items are salt, spices and anything under 30 g per jar: you usually have them at home, so they are not in the jar price. Sugar, vinegar and oil from 30 g are counted.
Method
Thaw the sea1 buckthorn, then sort through the juice and berries. Wash and dry the jar.
Rub the berries through a sieve or blend them and strain to remove the seeds and skins. You should get about 250 g puree.
Mix the puree with 400 g sugar2 and leave for 1–2 hours, stirring every 20 minutes, until the sugar dissolves.
Sterilize the 0,5 l jar and lid: steam the jar or heat it in the oven at 120 °C for 15 minutes, and boil the lid for 5 minutes. Let the jar cool.
Spoon the mixture into the jar, sprinkle 15 g sugar2 on top, and close with the lid.
Store only in the refrigerator; do not seal1 for shelf storage or keep in the pantry. Keep in the refrigerator for up to 2 months.
