- 2 Sugarpack 1 kg ≈ $1.60 110 g
- 3 Lemon≈ $4.70 per kg 10 g
Grey items are salt, spices and anything under 30 g per jar: you usually have them at home, so they are not in the jar price. Sugar, vinegar and oil from 30 g are counted.
Method
Remove the zest from one orange1 in a thin strip, cut it into matchsticks, and blanch for 2 minutes in boiling water, then drain.
Peel all the oranges1 and remove the white membranes, cut the flesh into pieces, and remove the seeds. You need about 250 g flesh.
Put the flesh, zest, 110 g sugar2, and 10 g lemon3 juice in a heavy-bottomed saucepan.
Bring to a boil and cook over medium heat for 25 minutes, stirring. The marmalade is ready when a drop on a cold saucer does not spread.
Transfer the hot marmalade to a clean 0.25 l jar, let cool, and cover with a lid.
Store in the refrigerator for up to 14 days.
