Balsamic-Marinated Strawberries with Black Pepper

Ingredients

1
  1. 1 Strawberriespack 400 g ≈ $3.50 130 g
  2. 2 Balsamic vinegarpack 250 ml ≈ $3.50 30 ml
  3. 3 Sugar 15 g
  4. 4 Black peppercorns 1 g

Grey items are salt, spices and anything under 30 g per jar: you usually have them at home, so they are not in the jar price. Sugar, vinegar and oil from 30 g are counted.

Method

  1. Wash and dry the strawberries1, then hull them. Halve large berries and leave small ones whole.

  2. Mix 30 ml balsamic2 vinegar, 20 ml water, and 15 g sugar in a bowl. Stir until dissolved.

  3. Pack the berries into a 0.25 l jar, add the peppercorns, and pour in the marinade.

  4. Gently turn the jar over once to distribute the marinade. Close with a lid.

  5. Refrigerate for 3 hours.

  6. Store in the refrigerator for up to 5 days; the berries will gradually soften.
