Keep the jar in the fridge only, up to 30 days.
Ingredients
- 1 Carrots≈ $1.50 per kg 300 g
- 2 Garlic≈ $10.00 per kg 8 g
- 3 Salt 5 g
- 4 Coriander seeds 1 g
Grey items are salt, spices and anything under 30 g per jar: you usually have them at home, so they are not in the jar price. Sugar, vinegar and oil from 30 g are counted.
Method
Peel the carrots1 and cut them into sticks about 8 cm long, so they sit slightly below the rim of a 0.5 l jar.
Pack the carrots1 tightly with the garlic2 and coriander, leaving 2 cm of headspace.
Dissolve 5 g salt in 200 ml boiled water at room temperature to make a 2.5% brine.
Pour the brine over the carrots1 so they are submerged. If needed, weigh them down with a round of cabbage leaf.
Cover the jar with a lid without tightening it fully, leave at room temperature for 5 days, and open once a day to release gas.
Check for doneness: bubbles should appear and the flavor should be pleasantly tangy. Seal the jar and refrigerate. Store for up to 30 days.
In short
- Marked healthy: the planner picks it more often for the goals “lose weight” and “eat well”.
