Ingredients
- 1 Red cabbagepack 1 kg ≈ $2.00 550 g
- 2 Apples≈ $3.50 per kg 100 g
- 3 Salt 13 g
- 4 Cumin 1 g
- 5 Black peppercorns 1 g
Grey items are salt, spices and anything under 30 g per jar: you usually have them at home, so they are not in the jar price. Sugar, vinegar and oil from 30 g are counted.
Method
Thinly shred the red1 cabbage and grate the unpeeled apple2 on the coarse side of a grater. The total weight of the vegetables should be about 650 g.
Sprinkle the vegetables with 13 g salt, which is 2% of the weight, and add the caraway and pepper. Massage by hand for 5 minutes, until the juices are released.
Pack tightly into a 1 l jar so the juice covers the cabbage. Leave 3 cm of headspace and press a cabbage leaf on top.
Cover with the lid without tightening it fully, set on a plate, and leave at room temperature for 5 days.
Once a day, pierce the cabbage all the way to the bottom with a wooden skewer to release gas bubbles.
Check for doneness: it should have a pleasant tang and plenty of juice. Seal the jar and refrigerate. Store for up to 45 days.
In short
- Marked healthy: the planner picks it more often for the goals “lose weight” and “eat well”.
