Method
Cut the pork2 into small pieces, slice the onion4 into half-moons, and mince the garlic5.
Heat a pot with sesame oil and fry the pork2 for 5–6 minutes until lightly browned.
Add the onion4, garlic5, and kimchi1 and cook for 4 minutes, stirring, until the kimchi softens.
Pour in 450 ml water, add the soy sauce and sriracha, and bring to a boil.
Simmer the soup for 20–25 minutes over low heat until the pork2 is tender.
Add the sliced tofu3, heat through for 3–4 minutes, and season with salt to taste.
Tips
- Why it works
- Обжарь кимчи вместе со свининой до воды: кислота станет мягче, а бульон выйдет темнее и гуще.
- Substitutions
- Шрирачу замени 1–2 ч. л. другого острого соуса или щепоткой чили. Свиную лопатку можно заменить шеей в том же весе.
- Common mistakes
- Частая ошибка — кипятить тофу слишком долго: он крошится, а суп мутнеет уже через 5–7 минут сильного кипения.
- Storing and reheating
- Храни 2 дня в холодильнике. Разогревай на слабом огне 5–7 минут, не бурли сильно, чтобы тофу не развалился.
