Method
Simmer fish stock from heads, bellies, tails, and fins for at least 1 hour.
Peel and finely dice the potatoes3.
Finely chop the leek2.
Remove the fish from the stock. Pick the meat from the bones. Strain the stock, then season with salt.
Cook the leek2 and potatoes3 in the stock. Add cream1 for the last 5 minutes.
Blend the soup smooth, then return it to the pot.
