Method
Rinse the chicken1 fillet and cut into 2 cm cubes; peel and cube the potatoes3 to 2 cm; dice the onion5 to 1 cm; dice the carrot4 to 1 cm; heat a pot over medium heat and melt a small amount of butter7.
Make the broth: pour 500 ml of water over the cubed chicken1 and simmer over medium heat for 15 minutes until the meat reaches an internal temperature of 74°C and is juicy.
Add the potato3 cubes to the broth and simmer over medium heat for 10 minutes, until the potatoes can be pierced easily with a knife.
Sauté the onion5 and carrot4 in oil over medium heat for about 4–5 minutes until soft, then transfer to the soup.
Stir in the small pasta6 and cook according to package directions, stirring occasionally, until the pasta is tender.
Add the cottage cheese and stir over low heat until fully melted, season to taste.
Remove from heat, let stand for 1–2 minutes, sprinkle with dill8 and serve hot.
Tips
- Why it works
- Cut potatoes and chicken to 2 cm so they cook evenly and stay tender without turning to mush. Smaller pieces overcook faster; larger ones stay hard.

- Use 50g Greek yogurt instead of cottage cheese for a tangier taste, or swap 30g pasta for elbow macaroni if you prefer.
