Ingredients
- 1 Bananas≈ $1.45 per kg 60 g
- 2 Eggspack 10 pcs ≈ $1.89 1 pcs
- 3 Oat flour 30 g
- 4 Milk 2.5%pack 930 ml ≈ $0.88 30 ml
- 5 Baking powder 1 g
- 6 Sunflower oil 3 ml
Grey rows are pantry staples: salt, oil, spices. They are not counted in the serving price.
Method
Peel the banana1 and mash it with a fork into a smooth purée with no lumps. A ripe banana with dark spots will be sweeter.
Add the egg and milk4 to the purée and stir with a fork until smooth.
Add the oat flour and baking powder and stir. Let the batter rest for 10 minutes so the flour swells and the batter thickens.
Lightly grease a nonstick frying pan with a drop of oil (using a paper towel) and heat over low-medium heat.
Spoon the batter into the pan to make small pancakes, 5–6 cm across. Cover with a lid and cook for 3 minutes, then flip and cook for another 2–3 minutes until pale golden, with no crust. The center should be dry when pierced with a toothpick.
Let cool for 5 minutes and cut into small pieces. Serve warm, with grated apple or yogurt if you like.
Tips
- Why it works
- Let the batter stand for 10 minutes so the oat flour swells. Without it the pancakes turn crumbly, break in the hand and stay raw inside. Low heat with a lid warms the middle through until golden.
- Substitutions
- Swap the oat flour for 30 g of wheat flour. If the banana is not very ripe, add 20 g of grated apple for more sweetness.
- Common mistakes
- The most common mistake is high heat. The bottom darkens in a minute while the middle stays wet. Check with a toothpick: no batter should stick to it, and the pancake should be light golden.
- Storing and reheating
- Keep in a closed container in the fridge for up to 1 day. Reheat for 20–30 seconds in the microwave or in a covered pan, until warm. You can freeze them for 1 month.
- Serve with
- Serve warm with grated apple or yogurt, cut into pieces the size of your toddler's fingernail so they can pick them up by hand.
In short
- A child's portion for ages 1–3; suitable from 12 months. For younger kids, halve it and purée.
