Grey rows are pantry staples: salt, oil, spices. They are not counted in the serving price.
Method
Boil the broccoli1 and cauliflower2 straight from frozen in boiling water for 7–8 minutes, until soft. Drain and let cool slightly.
Finely chop the vegetables with a knife so there are no large pieces or tough stalks.
Grate the cheese on the fine side of the grater. Preheat the oven to 180 °C. Grease a small baking dish with butter6 and add the vegetables.
Beat the egg with the milk3 until smooth, pour over the vegetables and sprinkle with the cheese.
Bake for 20–25 minutes, until the custard is set and not runny and the cheese is golden.
Let cool for 5 minutes and cut into small pieces. No salt is needed: the cheese is already salty.
Tips
- Why it works
- Chop the cabbage finely after boiling: cooked florets are soft, so the knife doesn't turn them to mush. Tough stems are easy to spot and remove this way, since they are hard for a toddler to chew.
- Substitutions
- Instead of milk, use the same amount of formula or kefir, and the custard will set a bit firmer. Hard cheese can be replaced with mozzarella, 20 g.
- Common mistakes
- Don't skip squeezing the cabbage after boiling, or water collects in the dish. If there is a puddle on the bottom and the custard wobbles at the edges and hasn't set, give it 5 more minutes.
- Storing and reheating
- Keep in a closed container in the fridge for 2 days. Reheat a portion in the oven at 160 °C for 8 minutes or in the microwave, then check that the pieces are warm, not hot.
- Serve with
- Serve for dinner with a piece of soft bread or boiled potatoes, 1-2 tbsp.
In short
- A child's portion for ages 1–3; suitable from 18 months. For younger kids, halve it and purée.
