Chicken Vermicelli Soup

Method
Rinse the chicken1 breast and pat dry, cut into 2 cm cubes; prepare a pot of about 2 L, pour in 300 ml cold water and place over medium heat to warm.
Bring the water with chicken1 to a boil over high heat, skim, simmer 15 minutes over medium heat; discard the first broth.
Add the potatoes3 cut into 2 cm cubes and the carrots4 cut similarly to the broth; simmer 10 minutes until vegetables are almost tender.
Add the vermicelli and cook over medium heat for 5 minutes, stirring to prevent sticking.
Finely chop the chicken1, return to the soup, sprinkle with dill5; season to taste if desired and stir, then cook another 2 minutes until the chicken is heated through.
Remove from heat, check the chicken1 is cooked (meat should be tender; internal temperature at least 74°C), if needed let rest covered for 1–2 minutes.
Serve hot, with extra dill5 if desired, and optionally with bread; keep the serving hot.
Tips
- Why it works
- Cut chicken into 2 cm cubes so they cook evenly and stay tender without drying out. Smaller pieces overcook faster; larger pieces stay tough.
- Substitutions
- Use 50g of leftover roast chicken instead of breast for richer flavor. Swap carrots for 30g of frozen peas if you prefer; add them with the vermicelli.
- Common mistakes
- Overcooking chicken makes it rubbery. Check with a fork or thermometer (74°C). If broth smells burnt, you simmered too long without water.
- Storing and reheating
- Eat fresh or store for 2 days in the fridge; reheat gently in a pot with 50 ml water until hot. Freezes poorly. Vermicelli soften.
- Serve with
- Pair with a slice of buttered toast and a side of pickled cucumbers for crunch. Serve to kids with a small bowl of plain yogurt.
