Method
Preparation: rinse the cod1, broccoli3 and potatoes2; peel the potatoes and cut into 2 cm pieces; separate the broccoli into small florets; prepare the steamer and set it to 100°C.
Preparation: place the potatoes2 in the steamer or in boiling water on a bed of water to boil until tender; monitor the water level in the pot; boil the potatoes 12–15 minutes until tender; drain.
Cooking: steam cod1 fillets and broccoli3 for 12 minutes until tender; keep the heat even; don't overheat.
Cooking: remove the broccoli3 and cod1 when cooked; check the cod for bones and remove if needed.
Preparation: mash the potatoes2 while hot; add butter4 and mash until fluffy, if needed stir in a small amount of water; achieve a uniform consistency.
Serving: arrange the potatoes2 and broccoli3 on a plate; place the cod1 on top; drizzle a small amount of melted butter4.
Serving: serve the dish warm; optionally garnish with herbs; store leftovers in the refrigerator no more than 24 hours.
Tips
- Why it works
- Cut potatoes into 2 cm pieces so they cook evenly and don’t turn mushy or stay hard.
- Substitutions
- Use frozen peas (40g) instead of broccoli; swap butter for olive oil (4g) if preferred.
- Common mistakes
- Oversteaming cod makes it dry—it should flake easily with a fork and smell clean, not fishy.
- Storing and reheating
- Eat fresh or keep for 1 day; reheat in a dry pan for 2 minutes to crisp the cod slightly.

- Pair with a side of cucumber sticks for crunch and balance the richness of the butter.
