Method
Prep: wash the apples3, peel and grate on a fine grater.
Prep: combine kefir1 with the egg and sugar, and whisk until smooth.
Prep: sift in the flour with the baking powder and mix to avoid lumps.
Prep: fold in the grated apple3 and mix again until evenly distributed in the batter.
Heat a skillet over low heat and brush with a small amount of oil.
Cook the pancakes: drop spoonfuls of batter onto the skillet and fry 2 minutes on each side until golden.
Serve: enjoy warm, with a warm drink. You can substitute apples3 with pears and adjust the sugar to taste; the batter can be made ahead and stored in the refrigerator until serving.

- Why it works
- Use low heat to cook the pancakes slowly. High heat burns the outside before the center cooks, leaving them raw inside.
- Substitutions
- Replace apples with 40g grated pear; reduce sugar to 2g if the fruit is sweet. Use 4g plain yogurt instead of kefir if needed.
- Common mistakes
- Overmixing the batter makes pancakes dense. Stop stirring once the flour is just combined and small lumps remain.
- Storing and reheating
- Store batter in the fridge for 1 day, covered. Reheat cooked pancakes in a dry pan for 1 minute per side. Eat fresh for best texture.
