Method
Rinse the chicken2, cut into small pieces, and place in a medium pot; cover with water and simmer on medium heat for 20 minutes, skimming foam as needed, until the internal temperature reaches at least 74 C.
Peel the pumpkin1 and potatoes3, cut into 2 cm cubes, place in another pot, cover with water and bring to a boil; boil on medium heat for 15 minutes, until the vegetables are soft.
Take the chicken2 off the heat and set aside, do not discard the broth; pat dry in the air or cool slightly before transferring to the blender.
In the blender, combine the chicken2 with a small amount of broth and blend until smooth, adding more broth as needed to achieve a uniform texture.
Drain the pumpkin1 and potatoes3, add to the chicken2 puree and blend together with the chicken and broth until creamy and uniform; add broth if needed to reach the desired thickness.
Reheat the puree over low heat for 2–3 minutes, stirring, until warm and evenly heated; season with salt to taste and remove from heat.
Tips
- Why it works
- Simmer chicken until it reaches 74°C to kill bacteria like salmonella; undercooked meat smells slightly metallic or feels rubbery when cut.
- Substitutions
- Replace pumpkin with 80g butternut squash or swap potatoes for 40g sweet potato. Use chicken broth instead of water for deeper flavor.
- Common mistakes
- Overcooking chicken makes it dry and stringy; check with a thermometer or cut a piece to see if it’s still juicy.
- Storing and reheating
- Eats best fresh but keeps 2 days in the fridge; reheat gently in a pot with 1 tbsp water until warm, stirring often.
- Serve with
- Pair with whole-grain toast strips for extra texture or serve alongside steamed broccoli florets for a balanced dinner.
In short
- A child's portion for ages 1–3; suitable from 8 months. For younger kids, halve it and purée.
