Method
Peel the carrot2 and grate it on the fine side of a grater. Simmer in a small saucepan with 1 g of the butter6 and 2 tablespoons of water, covered, for 5 minutes until soft. Let cool.
Mash the cottage1 cheese with a fork or press it through a sieve, then add the egg (for two servings, use one whole egg), sugar, and semolina4.
Add the carrot2, stir, and let stand for 10 minutes so the semolina4 swells. The mixture should be soft but hold its shape.
Preheat the oven to 190 °C. Line a baking sheet with parchment paper and grease it with the remaining butter6.
With damp hands, shape 3 small patties about 1.5 cm thick and place them on the baking sheet.
Bake for 20–25 minutes, flipping after 12 minutes, until pale golden and firm in the center.
Let cool for 5 minutes. Serve warm, with sour cream or yogurt if you like.
Tips
- Why it works
- Simmer the carrot with water for 5 minutes. It softens to a grated mush, so your toddler doesn't chew tough fibers. The semolina swells in 10 minutes and binds the mixture without extra flour.
- Substitutions
- Swap the carrot for 30 g of pumpkin, grated the same way, for a sweeter result. Swap the semolina for 8 g of rice flour.
- Common mistakes
- The mixture is too runny and the patties spread on the pan. If the batter runs off the spoon, add 3–5 g of semolina and wait another 5 minutes.
- Storing and reheating
- Keep covered in the fridge for up to 2 days. Reheat in the oven at 160 °C for 5–7 minutes or in the microwave for 20 seconds, and make sure they are warm. Frozen ones work too.
- Serve with
- Serve with a tablespoon of plain yogurt or sour cream and pieces of soft pear.
In short
- A child's portion for ages 1–3; suitable from 18 months. For younger kids, halve it and purée.
