Method
Rinse the rice and parboil it in salted water for about 5 minutes; finely shred the cabbage into slices about 1 cm thick; peel the onion4 and chop half of it.
Mix the filling: combine the ground1 meat, rice, cabbage, half of the onion4, egg and salt until evenly combined.
Shape small patties about 6–7 cm in diameter and 2–3 cm thick, and place the patties in a single layer in a large pan at least 28 cm in diameter.
Fry: heat the pan over medium heat and fry the patties for 3 minutes on each side until golden brown, without moving them too often.
Make the sauce: in the same pan, sauté the remaining onion4 and finely grated carrot5 over medium heat until soft, about 4–5 minutes; add tomato6 paste, sour7 cream and 150 ml water and mix.
Simmer: return the patties to the pan, pour the sauce, cover and simmer over low heat for about 25 minutes, stirring occasionally and adding a little water if needed.
Check doneness: ensure the filling and rice are cooked and infused with the sauce; if necessary extend simmering by 5–10 minutes until the liquid reduces slightly and the sauce thickens.
