Spinach Pkhali with Walnuts
A cold appetizer made with spinach, walnuts, cilantro, and spices. Serve it as balls or as a thick pâté topped with pomegranate seeds.

Method
Blanch the spinach in boiling water for 1 minute, until the leaves wilt.
Drain the spinach in a sieve, rinse with cold water, and squeeze out the excess moisture well.
Blend the walnuts2, garlic3, cilantro4, khmeli suneli, coriander, salt, and pepper in a blender.
Add the spinach and vinegar, and blend to a thick paste, but not a runny purée.
Shape into balls or mound the mixture on a plate.
Chill for 15 minutes and sprinkle with pomegranate10 seeds before serving.
Tips
- Why it works
- Шпинат обдай холодной водой сразу после кипятка: так он быстрее остывает, сохраняет зелёный цвет и не доходит от остаточного тепла.
- Substitutions
- Если нет кинзы, замени её петрушкой в том же количестве. Уксус 9% можно заменить лимонным соком: возьми около 10 г.

- Чаще всего шпинат плохо отжимают: масса выглядит водянистой, расползается на тарелке и не держит форму шариков.

- Храни в холодильнике до 2 дней в закрытом контейнере. Не разогревай, подавай холодным после 10 минут при комнатной температуре.
