Method
Prepare the beef: rinse and cut into thin strips about 0.5 cm wide and 5 cm long; peel the onion3 and cut into half-rings; peel the potatoes2.
Sear the beef: heat a large skillet over high heat and sear the beef in a single layer for 3 minutes until a crust forms, then turn and sear for another 1–2 minutes.
Remove the beef to a plate and set aside.
In the same skillet, sauté the onion3 over medium heat until golden, about 4–5 minutes.
Stir in the flour and cook for 1 minute to lightly brown.
Stir in sour4 cream, mustard and 100 ml of water, return the beef to the pan, season to taste, cover and simmer on low for 25 minutes.
Tips
- Why it works
- Sear the beef on high heat first to lock in juices and prevent it from turning rubbery during the long simmer. Overcooking here makes it tough and dry.
- Substitutions
- Use Greek yogurt instead of sour cream (50g) for a tangier taste, or swap mustard for 5g of Dijon for a milder kick. Skip flour if unavailable—stir 10g cornstarch into the sour cream instead.
- Common mistakes
- If the gravy splits or curdles, it means you added sour cream too hot. Look for a broken, lumpy texture or a sour smell when it cools.
- Storing and reheating
- Eats best fresh but keeps 3 days in the fridge. Reheat in a pan on low heat with 20ml water to loosen the gravy. Freezes poorly—sauce separates.
- Serve with
- Pair with steamed green beans or a simple cucumber salad to cut the richness. Serve with crusty bread for dipping if you want extra texture.
