Grey rows are pantry staples: salt, oil, spices. They are not counted in the serving price.
Method
Prepare: rinse the lettuce and tomato5; peel1 the shrimp and rinse under cold water; cut the bread into cubes about 1 cm; heat a skillet over medium heat and lightly grease it with a drop of oil.
Toast the bread until golden brown, 2–3 minutes in the same pan with a drop of oil, stirring to brown evenly.
Sauté the shrimp with garlic7 for about 3 minutes over medium heat; salt to taste and cook until pink.
In a small bowl, mix mayonnaise, lemon8 juice, and grated cheese until smooth and homogeneous.
Tear the lettuce into large pieces and slice the tomato5 into rounds.
Combine the salad, tomato5, shrimp, and croutons; dress with the sauce and toss until evenly coated.
Serve on plates immediately; if desired, garnish with a lemon8 wedge.
Tips
- Why it works
- Cook shrimp only 3 minutes to avoid rubbery texture; overcooking turns them opaque and dry. Use medium heat to keep them pink and tender.
- Substitutions
- Replace mayonnaise with Greek yogurt (20g) for a lighter texture, or swap hard cheese for Parmesan (15g) for sharper flavor.
- Common mistakes
- Shrimp turns gray or slimy if overcooked; check by cutting one open—it should stay translucent and firm.
- Storing and reheating
- Eat fresh; lettuce wilts and dressing separates after 1 day. Do not freeze—shrimp and croutons lose texture.
- Serve with
- Pair with a glass of dry white wine like Sauvignon Blanc for a balanced, refreshing dinner.
