Method

  1. Wash the chicken1 thighs and pat dry with paper towels; cut into pieces 3–4 cm in size; peel the onion4 and slice into rings about 5 mm thick; heat a skillet over medium heat and add a small amount of oil.

  2. Fry the chicken1 over medium heat for 6–8 minutes until golden brown, stirring occasionally so the pieces cook evenly.

  3. Add the onion4 to the chicken1 and fry together for another 4 minutes over medium heat until the onion is translucent.

  4. Stir in flour, then add sour3 cream, minced garlic5 and 100 ml of water; season with salt and pepper; simmer over low heat for 12 minutes, until the sauce thickens and the chicken1 is tender.

  5. Cook the pasta2 in a large pot of salted water according to package directions until al dente; drain.

  6. Combine the pasta2 with the chicken1 and sauce, or plate separately, garnish with fresh dill8, and serve with the sauce alongside the pasta.

Tips

Why it works
Pat the chicken dry to prevent steam from making the skin soggy and sticking to the pan. Fry at medium heat to brown evenly without burning the outside before the inside cooks.
Substitutions
Use Greek yogurt instead of sour cream (same amount) for a tangier, lighter sauce. Swap onion rings for 50g diced bell pepper if you prefer a sweeter flavor.
Common mistakes
Overcooking the chicken makes it dry and rubbery; check by cutting into a piece. Juices should run clear, not gray or pink.
Storing and reheating
Eat fresh or store for 2 days in the fridge; reheat in a pan with 1 tbsp water for 3–4 minutes. Freezes well for 1 month if sauce is sealed tightly.
Serve with
Pair with a simple green salad and a slice of crusty bread for a balanced, filling lunch. Works well for a quick weeknight meal with picky eaters.
