Method
Preparation: rinse the chicken1 fillet and cut into small cubes about 0.5 cm; combine the chicken with egg, sour4 cream, flour, dill5, salt and pepper; mix until uniform and let stand for 15 minutes.
Heat a skillet over medium heat and lightly grease with oil; shape the mince into patties about 6 cm in diameter and 1 cm thick, gently press the edges.
Fry the patties over medium heat for 3–4 minutes on each side until a golden crust forms and they are cooked through; flip only once.
Meanwhile, prepare the salad: slice the cucumbers6 into 0.5 cm rounds; salt and toss with finely chopped dill5.
Remove the cooked patties from the heat and let rest under a lid for a minute; if desired, spread a small amount of sour4 cream on top.
To serve: place the patties on a plate, arrange the cucumber6-dill5 salad beside them; serve immediately with your favorite side.
Tips
- Why it works
- Rest the patties under a lid to keep them juicy. Overcooking after flipping dries them out. Look for steam when you lift the lid.

- Use Greek yogurt instead of sour cream (same amount) for a tangier taste. Skip dill and use parsley if needed.
