Gomi with Suluguni and Butter

Method
Bring 300 ml of water to a boil, then add salt.
Slowly stir in the cornmeal1 in a thin stream while whisking constantly.
Simmer over low heat for 35–40 minutes, stirring often, until the grits are fully tender.
Stir in the butter2 until smooth.
Cut the Suluguni3 into chunks and fold into the hot porridge just before serving.
Serve while the cheese begins to melt from the gomi’s warmth.
Tips
- Why it works
- Добавь масло в конце, чтобы оно не подгорело и равномерно распределилось по каше. Перемешивай крупу тонкой струёй, иначе она комками сварится.
- Substitutions
- Замени сулугуни на фету (55 г) — будет менее жирно, но сохранятся кусочки. Масло сливочное замени на топлёное (10 г), если нет свежего.
- Common mistakes
- Каша получится сухой, если перемешивать редко или варить на сильном огне. Она будет липнуть к дну и не размякнет полностью.
- Storing and reheating
- Хранится 2 дня в холодильнике. Разогревай на водяной бане, добавляя 10 мл воды, чтобы не подсохла. Не замораживай.
- Serve with
- Подавай с чаем или кофе, чтобы сыр быстрее растаял и каша не остыла. Дай ребёнку с мёдом, если нужно сладкое.
