Method
Wash tomatoes1, cucumbers2, pepper and onion6; cut tomatoes into chunks about 2–3 cm, cucumbers 1.5–2 cm, peppers 1.5–2 cm; slice onion into thin half-rings.
Cut feta4 into cubes; leave olives5 whole9 and add to the vegetables.
Drizzle with oil, squeeze lemon8, salt to taste; gently toss until the dressing is evenly distributed.
Serve with bread.
Tips
- Why it works
- Cut cucumbers and peppers into even chunks so they soften at the same rate and don’t make the salad watery.
- Substitutions
- Use pickles (30g) instead of olives for a tangier taste; swap feta for goat cheese (60g) if unavailable.
