Method
Peel the potato3, cut into 1–1.5 cm cubes, cover with 250 ml of boiling water, and cook for 8 minutes.
Add the frozen broccoli1 and cauliflower2 without thawing, bring to a boil, and cook, covered, for 10–12 minutes, until the florets are soft.
Add salt and remove from the heat for 5 minutes to cool slightly.
Blend with an immersion blender until smooth, adding a little hot water if needed.
Pour in the cream4, add the butter5, stir, and bring to a boil.
Let cool until warm and serve.
Tips
- Why it works
- Add the frozen cabbage without thawing, so it does not go mushy or lose bitterness into the water. A short cook of 10–12 minutes keeps the flavor mild with no sulfur smell.
- Substitutions
- Swap the cream for breast milk or infant formula, 40 ml, or just hot water with an extra 1 g of butter. Swap the broccoli for zucchini, 50 g.
- Common mistakes
- If the cabbage cooks longer than 15 minutes, the soup turns grey and smells sharply of cabbage. The color should stay light green and the smell neutral.
- Storing and reheating
- Keep in the fridge for 1 day, as the cabbage smell gets stronger on the second day. Reheat over low heat without boiling and cool to warm.
- Serve with
- Serve at lunch with soft white bread croutons without the crust, or with boiled rice on the side of the plate.
In short
- A child's portion for ages 1–3; suitable from 12 months. For younger kids, halve it and purée.
