Method
Rinse the pitted prunes1 and the dried2 apricots, cover with hot water for 10 minutes, then rinse again. Wash the apple3, peel it and remove the core.
Cut the dried2 fruit into small pieces and slice the apple3 into thin wedges.
Put the fruit in a saucepan and cover with 250 ml of cold water. Bring to a boil and simmer over low heat for 15 minutes, until the dried2 fruit is completely soft.
Remove from the heat, cover with a lid and let steep for 30 minutes.
Strain the compote. Put the softened fruit on a plate and cut into small pieces or mash with a fork. Serve the compote warm in a cup, with the fruit on the side to eat with a spoon.
Tips
- Why it works
- Soak the dried fruit in hot water for 10 minutes and rinse it. This removes dust and preservative residue, and the fruit softens faster.
- Substitutions
- Swap the apple for a pear of the same weight, the taste will be milder. You can replace the dried apricots with the same amount of seedless raisins, the compote will be sweeter.
- Common mistakes
- Undercooked fruit stays firm and is hard to chew. It should mash easily with a fork, otherwise cook for 5 more minutes.
- Storing and reheating
- Keep the compote in a closed jar in the fridge for up to 2 days. Warm it to about 37 °C before serving, don't give it hot. Don't freeze it.
- Serve with
- Serve as an afternoon snack with soft sugar-free cookies, or with porridge at breakfast, with the fruit on the side with a spoon.
In short
- A child's portion for ages 1–3; suitable from 12 months. For younger kids, halve it and purée.
