Soft pasta in a smooth vegetable sauce with tomato and grated cheese. The sauce has no chunks, so it works well for toddlers who don't like vegetables.

Grey rows are pantry staples: salt, oil, spices. They are not counted in the serving price.

Method

  1. Cut a cross in the tomato4, cover with boiling water for 1 minute, peel off the skin and chop. Peel the carrot3 and zucchini2 and cut into small pieces.

  2. Melt half the butter6 in a deep skillet, add the carrot3 and 3 tablespoons of water, cover and simmer for 7 minutes.

  3. Add the zucchini2 and tomato4, add salt and simmer for another 10 minutes, until the vegetables are completely soft.

  4. Blend the vegetables together with their liquid until the sauce is smooth. Grate the cheese on the fine side of the grater.

  5. Cook the small pasta1 in salted water for 2 minutes longer than the package directions (9–10 minutes), until soft. Drain.

  6. Toss the pasta1 with the sauce and the remaining butter6 and sprinkle with the cheese. Serve warm.

Tips

Why it works
Stew the vegetables until completely soft and only then blend them: undercooked carrot leaves grains that the child spits out. Peel the tomato for the same reason.
Substitutions
Zucchini can be replaced with pumpkin, 50 g, and the sauce will be sweeter. Instead of hard cheese, use any soft low-fat cheese, 15 g.
Common mistakes
The sauce turns watery if you blend the vegetables with too much liquid. It should drip slowly off the spoon, not pour. If it's too thin, simmer it for 2-3 minutes without a lid.
Storing and reheating
The sauce keeps for 2 days, but eat the pasta with it on the day you cook it, since it absorbs the sauce and turns gummy. The sauce alone can be frozen for 1 month. Heat it until hot, then let it cool.
Serve with
Serve for dinner with pieces of boiled chicken or fish if you want protein. The sauce also goes well with rice.

In short

  • A child's portion for ages 1–3; suitable from 18 months. For younger kids, halve it and purée.
