Grey rows are pantry staples: salt, oil, spices. They are not counted in the serving price.
Method
Cut the turkey1 into 1 cm cubes. Finely chop the onion4 and grate the carrot3 on the fine side of the grater. Rinse the rice until the water runs clear.
Put the turkey1, onion4 and carrot3 in a heavy-bottomed pot, pour in 100 ml of water and add 2 g of oil. Cover and simmer over low heat for 15 minutes.
Add the rice and a pinch of salt, then pour in 80 ml of hot water (just enough to cover the rice). Bring to a boil.
Reduce the heat to the lowest setting, cover and cook for 20 minutes, until all the water has been absorbed and the rice is soft.
Turn off the heat, stir in the remaining oil and let stand, covered, for 10 minutes. Check that the meat is soft and mashes easily with a fork.
In a multicooker: put all the ingredients in at once with 180 ml of water and use the "Pilaf" or "Stew" setting for 40 minutes.
Let cool until warm and stir.
Tips
- Why it works
- Stew the turkey with the onion and carrot in water for 15 minutes first. The breast is dense, and it won't turn soft in the time the rice takes to cook.
- Substitutions
- Swap the turkey for chicken fillet, 60 g, same timing. Swap the carrot for pumpkin, 25 g, and the rice will be slightly sweeter.
- Common mistakes
- The rice stays hard and the pot has no water left. If the grains crunch, add 2 tbsp hot water and keep it under the lid for another 5 minutes.
- Storing and reheating
- Keeps for 2 days in the fridge. Reheat with a spoonful of water until hot, then cool to warm and stir.
- Serve with
- Serve with soft steamed broccoli florets or fresh grated cucumber.
In short
- A child's portion for ages 1–3; suitable from 18 months. For younger kids, halve it and purée.
