Grey rows are pantry staples: salt, oil, spices. They are not counted in the serving price.

Method

  1. Rinse the millet2 in a sieve with warm water 3–4 times, then pour boiling water over it for 2 minutes and drain, which removes any bitterness. Rinse the rice until the water runs clear.

  2. Bring 100 ml water to a boil in a saucepan, add the millet2 and rice, and cook over low heat, covered, for 10 minutes.

  3. Pour in the hot milk3, add the sugar, and cook for another 20–25 minutes over low heat, stirring, until the grains are completely soft and the porridge is thick.

  4. Remove from the heat, add the butter4, cover, and let stand for 10 minutes.

  5. For a toddler, mash the porridge lightly with a spoon or masher so that no firm grains remain. Cool until warm and serve.

Tips

Why it works
Scald the millet with boiling water to remove its bitterness. Cook the rice and millet in water first, because grains soften worse in milk and stay hard for a long time.
Substitutions
Swap the millet for the same amount of round-grain rice, so 30 g of rice. Skip the sugar: the porridge is already slightly sweet from the milk.
Common mistakes
The most common mistake is pouring in cold milk and boiling hard right away. The porridge burns and the grains stay tough. Pour in hot milk, keep the heat low and check the bottom with a spoon.
Storing and reheating
Keep in the fridge for up to 1 day. Reheat with 2–3 spoonfuls of milk or water, stirring, and cool to warm. In the freezer the porridge turns watery.
Serve with
Serve warm for breakfast. You can add a spoonful of grated apple or pear puree.

In short

  • A child's portion for ages 1–3; suitable from 12 months. For younger kids, halve it and purée.
