Method
Cut the meat into 1-inch cubes; prep the remaining vegetables
Heat oil in a heavy pot, sear the meat until deeply browned
Add onion4, diced carrot2, and cubed potatoes3; fry until golden
Season with ground cumin, salt, and a pinch of fennel seeds
Pour in 3 cups water, add a bay leaf, and bring to a boil
Simmer uncovered for 20 minutes, stirring occasionally
