Method
Prepare the onion2: rinse it, peel and cut into half‑rings about 0.3 cm thick; choose a 20–24 cm skillet and heat it over medium; melt the butter.
Fry the onion2 over medium heat until soft, about 5–6 minutes, stirring.
Add tomato6 paste and cumin to the onion2; fry 1–2 minutes, stirring until fragrant and smooth.
Add the beans with their liquid to the onion2; bring to a light boil and simmer about 10 minutes, mashing some beans with a fork.
Crush the walnuts3, peel and crush the garlic4 together, then add to the beans along with cilantro5 and vinegar; heat 2 minutes over medium, stirring.
Season to taste, fold gently and remove from heat; serve with bread or lavash.
