Method
Rinse the buckwheat, then cook until tender.
Whisk the eggs3, scramble until set on both sides, and transfer to a plate.
Chop the asparagus2, carrot4, and ginger; sauté in oil with soy sauce and orange6 juice until soft.
Add the green5 onion, stir-fry for 1 minute.
Fold in the orange6 segments and crumbled scrambled eggs3 into the cooked buckwheat, mixing well.
