Method

  1. Wash the tomato6 and slice it into rounds about 0.5 cm thick.

  2. Spread butter5 on one side of the bread and toast on medium heat until golden and crisp, about 2–3 minutes.

  3. On the toasted side, layer ham2 and cheese, top with the second bread slice, cover with a lid to melt the cheese, and keep on medium heat about 1 minute.

  4. In the same pan, fry the egg on medium heat until the yolk is softly set, about 2–3 minutes; the yolk should remain runny inside, the white1 fully set.

  5. Remove the lid, transfer the ham2-and-cheese toast to a plate, top with the fried egg; arrange the tomato6 slices on the side.

  6. Serve the dish hot; garnish with herbs to taste; the dish is ready to eat.

  7. Alternative and make-ahead: you can toast the bread and melt the cheese ahead of time, fry the eggs3 just before serving; replace tomato6 with cucumber or green onion as you prefer.

Tips

Why it works
Toast the bread first so the butter doesn’t burn when you add ham and cheese later. Butter burns at 120°C, ham and cheese melt at 70–80°C.
Substitutions
Use smoked salmon instead of ham (40g) for a lighter taste. Replace tomato with cucumber slices (50g) if you prefer crunch.
Common mistakes
Overcook the egg. It’ll turn rubbery. Stop when the white is set but the yolk still wobbles slightly when you shake the pan.
Storing and reheating
Eat fresh or within 1 day. Reheat the toast in a toaster or pan for 30 seconds; fry eggs fresh.
Serve with
Pair with a cup of black coffee or green tea to cut the richness of the cheese and ham.
