Method
Peel the potatoes1, cut into large chunks, and cover with water.
Boil for 20–25 minutes after boiling point until tender, then drain.
Blend walnuts2, garlic3, cilantro4, vinegar, salt, and pepper in a food processor.
Add 80–100 ml of warm water and blend until a thick sauce forms.
Pour the sauce over the hot potatoes1 and gently fold together.
Let sit for 5 minutes so the potatoes1 absorb some of the sauce.
Tips
- Why it works
- Орехи и чеснок взбивай в блендере с тёплой водой, чтобы соус стал однородным и не комковался. Холодная вода сделает его слишком густым.
- Substitutions
- За грецкие орехи возьми фундук или кедровые — по 35 г. Вместо уксуса используй лимонный сок, но уменьши до 4 г.
- Common mistakes
- Соус получится жидким, если добавишь слишком много воды. Проверяй консистенцию через минуту после взбивания.
