Method

  1. Boil potatoes1 in their skins for 20–25 minutes, let cool slightly, peel, and slice into 5mm rounds.

  2. Cut bacon2 into strips and fry in a pan for 4 minutes until crisp; finely chop onions3 and sauté in the bacon fat for 3 minutes.

  3. Make the dressing: add mustard, vinegar, oil, 3 tbsp water, salt, and pepper to the pan with onions3; warm through for 30 seconds.

  4. Toss warm potatoes1 with the hot dressing, add diced cucumbers and bacon2, and gently mix.

  5. Let sit for 15 minutes to absorb the dressing; sprinkle with green8 onion3 and serve warm.

Tips

Why it works
Peel potatoes after cooling to avoid turning the dressing cloudy from starch; warm potatoes absorb dressing better than cold.
Substitutions
Use smoked ham instead of bacon (30g) for a milder taste. Replace dill pickles for cucumbers (30g) if unavailable.
Common mistakes
Overcooking bacon makes it bitter; it should be golden and crisp in 4 minutes, not dark brown or rubbery.
Storing and reheating
Keeps 3 days in the fridge; reheat in a pan for 5 minutes, adding 1 tbsp water to prevent drying. Freeze without cucumbers for 1 month.
