  2. 2 Orange juicepack 1 l ≈ $3.00 150 ml
  3. 3 Gelatin 6 g
  4. 4 Sugar 8 g

Method

  1. Cut an orange1 in half and carefully scoop out the flesh, leaving the intact peels.

  2. Bloom 1 tsp (or 3g) gelatin in 40 ml fresh orange1 juice for 10 minutes.

  3. Heat the remaining juice with 2 tbsp sugar to 60–70 °C (do not boil).

  4. Stir in the bloomed gelatin until fully dissolved.

  5. Pour the mixture into the orange1 halves and refrigerate for 2 hours until firm.

Tips

Why it works
Желатин набухает в холодном соке, чтобы не скомковаться при нагревании. Нагревай сок до 70 °C, иначе желе не застынет.
Substitutions
Замени сахар 8 г мёдом или 10 г сахарной пудрой. Вместо апельсинового сока возьми грейпфрутовый, но уменьши желатин до 5 г.
Common mistakes
Желе не застывает, если сок кипел или желатин не растворился полностью. Проверяй: смесь должна быть прозрачной и без комков.
Storing and reheating
Храни в холодильнике 3 дня, закрыв кожурки плёнкой. Разрезай и подавай без разогрева, иначе желе расплывётся.
Serve with
Подавай на день рождения с чаем или как десерт после лёгкого обеда с курицей и овощами.
