Method
Peel the potatoes1, carrot3 and zucchini2. Cut the potatoes and carrot into 1 cm cubes and the zucchini into 1.5 cm cubes. Finely chop the onion4. Thaw the cauliflower5 and break it into small florets.
Melt the butter6 in a deep skillet and cook the onion4 over low heat for 2 minutes, without letting it brown.
Add the carrot3 and potatoes1, pour in 100 ml of hot water, cover and simmer for 10 minutes.
Add the zucchini2 and cauliflower5, add salt and simmer for another 12–15 minutes, until soft: the vegetables should mash easily with a fork.
Stir in the sour7 cream and heat through for 2 minutes, without bringing to a boil.
Let cool until warm. For a 12-month-old, mash some of the vegetables with a fork; for an older child, leave them in soft pieces.
Tips
- Why it works
- Add the potato and carrot first, and the zucchini 10 minutes later. Zucchini cooks fast and would turn to mush while the potato gets done.
- Substitutions
- Swap the cauliflower for frozen broccoli, 50 g. Swap the sour cream for plain yogurt with no additives, 15 g, and add it at the end.
- Common mistakes
- The potato stays hard in the middle. A piece should crush with a fork without effort, otherwise stew for another 5 minutes. Don't boil it with the sour cream, the sauce will curdle.
- Storing and reheating
- Keeps for 2 days in the fridge. Reheat over low heat with a spoonful of water until hot, then cool to warm.
- Serve with
- Serve with a steamed turkey meatball or a piece of soft whole grain bread.
In short
- A child's portion for ages 1–3; suitable from 12 months. For younger kids, halve it and purée.
