Method
Prepare a mold and line it with plastic wrap.
Zest and juice the lemon1 and oranges2, then remove seeds and blend into a smooth purée.
Bloom the gelatin in warm water, then cool to body temperature and mix into the fruit purée.
Pour the mixture into the mold and chill for 30 minutes.
Heat the mixture until just shy of boiling, dissolve the gelatin, then cool to body temperature.
Fold in the yogurt, pour into the mold, and refrigerate for 2–3 hours.
