Method
Prep: Rinse the chicken1, place in a 2–3L pot, cover with cold water, and bring to a boil over medium heat. Skim foam, then simmer covered for 15 minutes until fully cooked (internal temp 74°C). Cool, then chop into 1cm cubes.
Prep: Hard-boil an egg for 9–10 minutes, cool, peel, and chop into 1cm cubes.
Prep: Finely chop the herbs.
Combine: In a large bowl, mix chicken1 and egg, then add cucumber3, radish4, and herbs. Toss well.
Dress: Pour in cold kefir2, add a spoon of mustard, season with salt to taste, and stir until smooth.
Serve: Chill the okroshka in the fridge for at least 15 minutes before serving. Plate and garnish with herbs—serve cold.
Tip: Prep ingredients ahead and store separately in the fridge until ready to assemble; adjust salt just before serving.

- Use buttermilk instead of kefir for a slightly milder taste; swap radish for 60g grated apple if unavailable.

- If the okroshka tastes bland, you likely under-salted. Taste before adding kefir, as it dilutes flavor. Over-chilling makes it watery.

- Eat within 2 days; store in an airtight container. Reheat by stirring in a splash of kefir or water until just warm. It’s best cold.
