Method

  1. Preparation: wash the zucchini2, grate on a coarse grater and squeeze out the excess moisture; finely chop the onion3; combine the turkey mince with the egg, bran and salt, add the prepared onion and the squeezed zucchini, mix thoroughly.

  2. Formation: shape the mixture into portions of about 100–120 grams each, giving them a smooth round shape with a thickness of about 1.5 centimeters.

  3. Heating: take a skillet about 24 centimeters in diameter, add a drop of oil and heat over medium heat until the fat coats the bottom and warms up.

  4. Frying the cutlets: fry the cutlets over medium heat for four minutes on each side until a golden crust appears, do not flip more often. Then cover the pan and cook for another five minutes over medium heat until fully cooked.

  5. Doneness check: the internal temperature should reach at least 74 °C; when done, remove from heat and let the cutlets rest briefly under the lid.

  6. Vegetables: in a separate skillet or saucepan, simmer the vegetable mix over low heat under a lid for eight minutes, stirring occasionally, until the zucchini2 becomes soft but retains its shape.

  7. Serving: transfer the cutlets to a plate, place the stewed vegetables beside them; serve hot; garnish with greens if desired.

Tips

Why it works
Squeeze zucchini to remove moisture so the cutlets don’t steam and stay crispy instead of soggy. Over-moisture makes them fall apart when frying.
Substitutions
Use 80g grated carrot instead of zucchini for a sweeter taste, or swap frozen veg mix for 150g chopped bell peppers and peas.
Common mistakes
Cutlets stay pink inside if undercooked. Use a meat thermometer; overcrowding the pan lowers temperature and causes greasy steam.
Storing and reheating
Eat fresh or within 2 days; reheat in a dry pan over medium heat for 3–4 minutes per side. Freeze cutlets only if breaded.
Serve with
Pair with a slice of whole-grain toast and a side of plain yogurt to balance the richness of the fried cutlets.
