Method

  1. Rinse the rice until the water runs clear and drain it; choose a 1.5–2 L pot and set it over medium heat to bring it to a gentle boil; cook for 8 minutes until the grains swell and most of the water is absorbed.

  2. Pour the milk2 into the pot, add sugar and salt; cook over medium heat, stirring occasionally, for 15–20 minutes, until the porridge is thick and creamy, some milk has evaporated, and the rice is tender.

  3. Remove from heat, add butter3 and stir until completely melted, so the porridge is smooth and glossy.

  4. Taste and adjust the salt as needed.

  5. Cover and let steep for 5 minutes on the table; the porridge will finish mellowing into a creamier texture.

  6. Divide into warmed bowls and serve with an extra pat of butter3 if desired; you can add a splash of warm milk2 on the plate if you like.

  7. Tip: you can substitute vanilla sugar for sugar to taste; you can make ahead and store in the fridge, reheating over low heat while stirring.

Tips

Why it works
Rinse the rice to remove excess starch so it doesn’t turn gluey or clump together during cooking. Stop when water runs clear.
Substitutions
Use evaporated milk (250ml) for a richer taste, or coconut milk (250ml) for a subtly sweet flavor. Skip sugar if you prefer vanilla sugar (8g).
Common mistakes
Overcooking makes the rice mushy and grayish; check when it’s tender but still holds shape, around 15–20 minutes total.
Storing and reheating
Keeps 3 days in the fridge; reheat in a pot over low heat, stirring until smooth. Freeze for up to 1 month if made without butter.
Serve with
Pair with a slice of buttered toast for breakfast or serve warm with a sprinkle of cinnamon for a simple dessert.
