Method
Trim lamb1 of any silver skin, cut into chunks, season with salt and black pepper, then sear in a hot pan
Braise until tender in a slow cooker or pot until the meat is fork-tender
Finely chop the cooked lamb1, slice apples2 and radishes4 into thin matchsticks
Grate the cheese coarsely, then finely chop the parsley5 and onion
Slice cucumbers8 into thin matchsticks, drain excess liquid, and mix with herbs and dressing
Layer in this order: lamb1, herbs, apples2, herbs, cheese, herbs, radishes4, herbs
Top with cucumbers8, herbs, and dressing; garnish with pomegranate7 seeds
