Method
Prepare: wash the onion4 and pepper; peel the garlic5; dice the onion into 1 cm cubes and cut the pepper into 1 cm strips; finely chop the garlic.
Heat a skillet about 26 cm in diameter over medium heat, add oil, and sauté the onion4 and pepper for 6 minutes until golden, stirring.
Add the garlic5, cumin, and paprika; sauté 1–2 minutes over medium heat until fragrant.
Pour in the tomatoes, crush them with a spoon, season with salt; simmer for 8 minutes over medium heat until the sauce slightly thickens.
Make wells with a spoon, crack the eggs1 into each well; cover the pan and cook on low heat for 5–6 minutes, until the whites set and the yolks are soft.
Remove from heat, sprinkle with cilantro10; serve with bread, arranging slices around the pan.

- Why it works
- Sauté the onion and pepper for 6 minutes to remove moisture and develop sweetness before adding garlic, which burns quickly at high heat.
- Substitutions
- Use canned diced tomatoes (200g drained) instead of fresh; swap cumin for ½ tsp coriander seeds if unavailable.

- Overcooking the eggs makes them rubbery. Stop when whites are just set and yolks are still runny.

- Eat fresh or store in the fridge for 2 days; reheat gently in the pan for 3–4 minutes, adding a splash of water.
