Method
Rinse the bulgur1 with cold water, measure 120 ml of boiling water, season with salt, and prepare a pot about 2 liters; cover with a lid and set over medium heat.
Cook: reduce heat to low, cook the bulgur1 covered for 12 minutes until the water is absorbed and the grains are soft. Then remove from heat, keep covered for another 2 minutes, and stir.
Prepare the egg: heat a skillet over medium heat and melt a small amount of butter4; crack in the egg and fry for 2–3 minutes, until the white is set and the yolk remains runny if desired.
Finish the bulgur1: add the remaining butter4 to the cooked bulgur and stir gently until it has a glossy sheen.
Assemble the dish: divide the bulgur1 among plates, sprinkle with crumbled brynza, top with the fried egg, and sprinkle herbs to taste.
Serve immediately while hot; the dish can be garnished with dill5 and served with a slice of bread.
Tips
- Why it works
- Rinse bulgur to remove excess starch so it doesn’t turn mushy; unrinsed bulgur clumps and absorbs too much water unevenly. Use boiling water to start cooking immediately and evenly.
- Substitutions
- Replace brynza with feta (30g) for a milder taste, or use cottage cheese (30g) for creaminess. Skip butter and use olive oil (7g) for a lighter texture.
- Common mistakes
- Overcooking bulgur makes it dry and crumbly; check at 12 minutes. It should look moist but not soupy. If it smells burnt, reduce heat immediately.
- Storing and reheating
- Eat fresh; bulgur dries out and loses texture after 1 day. Reheat in a dry pan for 2 minutes if needed, but the egg will firm up.

- Pair with a slice of rye bread and a glass of cold kefir for a balanced, protein-rich start to the day.
