Grey rows are pantry staples: salt, oil, spices. They are not counted in the serving price.

Method

  1. Blend the rolled1 oats, egg, and milk3 into a smooth, thin batter. Let stand for 5 minutes so the oats swell.

  2. Grease a nonstick frying pan with a drop of oil using a paper towel and heat over medium heat.

  3. Pour in the batter, cover with a lid, and cook over low heat for 3 minutes, then flip and cook for another 2 minutes. The pancake should be fully set, with no runny center and no browned crust.

  4. Mash the banana5 with the soft4 cottage cheese using a fork until smooth.

  5. Spread the filling on the pancake, roll1 it up, and cut into small pieces.

  6. Serve warm.

Tips

Why it works
Let the batter rest for 5 minutes so the flakes swell and the pancake doesn't tear when you roll it. Under a lid it sets with steam and gets no browned crust, which is hard for a toddler to chew.
Substitutions
Swap the banana for 50 g of soft pear or baked apple. Swap the cottage cheese for 40 g of plain yogurt cheese.
Common mistakes
The pancake tears when you flip it while the center is still raw. Flip it when the edges lift from the pan and the top stops shining.
Storing and reheating
An unfilled pancake keeps in the fridge for up to 2 days. A filled one is best eaten the same day because the banana darkens. Reheat for 15–20 seconds in the microwave.
Serve with
Serve for breakfast with a few slices of fresh banana or soft pear.

In short

  • A child's portion for ages 1–3; suitable from 18 months. For younger kids, halve it and purée.
