- 3 Wheat flour 20 g
- 4 Baking soda to taste

Method
Steep honey in hot black tea until fully dissolved and cooled.
Whisk eggs5 until smooth and pale.
Combine the honey-tea mixture with the eggs5.
Sift together flour, baking soda, and orange zest in a bowl.
Gently fold the dry ingredients into the egg-honey mixture.
Zest and finely segment an orange (remove membranes), then mix with the honey.
Divide batter into greased or lined muffin cups, filling ⅔ full.
