- 6 Ground black pepper to taste

Method
Finely dice or grate the onion3, then mix with the ground2 beef, salt, and black pepper.
Add 35–45 ml of cold water to the filling and knead until it’s juicy but slightly loose.
Divide the dough into 2 equal parts and roll each into a thin circle.
Place the filling on half the circle, leaving a 1.5 cm border, then cover with the other half.
Pinch the edges tightly and score with a fork to prevent filling from leaking.
Heat oil in a skillet and fry the chebureki1 for 3–4 minutes per side until golden brown.
Drain on paper towels for 1 minute, then serve hot.
Tips
- Why it works
- Воду добавляй холодной, чтобы фарш не сварился сразу и начинка оставалась сочной при жарке. Если вода теплая, мясо стянется и станет сухим.
- Substitutions
- Лук замени на 30 г зеленого лука, нарезанного мелко — будет нежнее, но вкус изменится. Масло подсолнечное можно заменить сливочным (10 г), но оно горит быстрее.
- Common mistakes
- Если тесто не раскатано тонко, чебуреки будут плохо прожарены внутри и сырыми. Проверяй, прокалывая ножом — сок должен быть прозрачным.
- Storing and reheating
- Храни в холодильнике 1 день, обернув в бумагу. Разогревай на сковороде 2–3 минуты с каждой стороны. Не замораживай — тесто станет жестким.
- Serve with
- Подавай с острым соусом или сметаной к шашлыку или вину на праздничном столе. Можно добавить на тарелку с грибами или овощами.
