Homemade Rye Bread Kvass

Method
Cut the bread into cubes and dry at 325°F (160°C) for 15–20 minutes until dark crackers form without burning.
Transfer the crackers to a large jar, pour in 3 liters of boiling water, cover, and let steep for 3 hours until warm.
Strain the liquid, add sugar, and stir until fully dissolved.
Mix in active-dry yeast and raisins4, cover with cheesecloth, and ferment at room temperature for 20–24 hours.
When bubbles form and a tangy bread aroma develops, strain the kvass again.
Bottle tightly, refrigerate for 3–4 hours, and chill before serving.
Tips
- Why it works
- Сухари подсушивают при 160 °C, чтобы убить бактерии и предотвратить брожение раньше времени. Пересушивание даст горький привкус.
- Substitutions
- Замени изюм на курагу (30 г) — получится менее сладкий квас. Вместо бородинского хлеба подойдет ржаной (20 г), но аромат будет менее насыщенным.
- Common mistakes
- Если квас не пузырится через 24 часа, значит дрожжи неактивны или слишком холодно. Проверить по отсутствию кислого запаха и пузырьков на поверхности.
- Storing and reheating
- Хранится в холодильнике 3 дня. Перед подачей перелить в стакан и подождать 10 минут, чтобы вышел газ. Не замораживай.
- Serve with
- Подавай к жареной курице или солёным огурцам на праздничном столе. Замени сок или компот на закуску.
