Method
Cut the beef tenderloin in half lengthwise and open like a book
Remove the silver skin and fat, pound the meat on both sides, season with salt, black pepper, and minced garlic5, then let marinate for 15 minutes
Finely chop the mushrooms and onion3, then sauté in sunflower oil
Trim the edges of the meat, spread chopped parsley4 along the edges, and place the mushroom-onion3 mix in the center
Fold the long sides of the meat inward over the filling and press with your fingers
Roll tightly into a log, then sprinkle with dried herbs de Provence
Secure the roll with kitchen twine or plain cotton string (if needed)
